For the Chocolate Cake Layer:

1 3/4 cups all-purpose flour

1 1/2 cups granulated sugar

3/4 cup unsweetened cocoa powder

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt

2 large eggs

1 cup whole milk

1/2 cup vegetable oil

2 tsp vanilla extract

1 cup boiling water

For the Dark Chocolate Mousse:

6 oz dark chocolate (70% cocoa), finely chopped

3 tbsp unsalted butter

1 cup heavy whipping cream, chilled

2 tbsp granulated sugar

1/2 tsp vanilla extract

2 large egg whites

Pinch of salt

For the Milk Chocolate Mousse:

6 oz milk chocolate, finely chopped

3 tbsp unsalted butter

1 cup heavy whipping cream, chilled

2 tbsp granulated sugar

1/2 tsp vanilla extract

2 large egg whites

Pinch of salt

For the White Chocolate Mousse:

6 oz white chocolate, finely chopped

3 tbsp unsalted butter

1 cup heavy whipping cream, chilled

2 tbsp granulated sugar

1/2 tsp vanilla extract

2 large egg whites

Pinch of salt

Garnish:

Chocolate shavings or curls

Fresh berries (optional)

Instructions
 

Make the Chocolate Cake Layer:

    - Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

      - In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.

        - Add eggs, milk, oil, and vanilla to the dry ingredients. Mix until smooth, then stir in the boiling water until combined (batter will be thin).

          - Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean. Let it cool completely in the pan.

            Prepare the Dark Chocolate Mousse:

              - Melt dark chocolate and butter over a double boiler or in the microwave until smooth. Let it cool slightly.

                - In a bowl, whip the chilled cream with sugar and vanilla until soft peaks form.

                  - In another bowl, whip egg whites with a pinch of salt until stiff peaks form.

                    - Fold the melted chocolate mixture into the whipped cream, then gently fold in the egg whites. Set aside.

                      Prepare the Milk Chocolate Mousse:

                        - Repeat the same melting and whipping process as for the dark chocolate mousse. Set aside when done.

                          Prepare the White Chocolate Mousse:

                            - Repeat again with the white chocolate, following the same method as the previous mousses.

                              Assemble the Cake:

                                - Place the cooled chocolate cake layer on a serving platter.

                                  - Pour the dark chocolate mousse over the cake, spreading it evenly. Refrigerate for about 30 minutes to set.

                                    - Next, add the milk chocolate mousse layer and refrigerate for another 30 minutes.

                                      - Finally, top with the white chocolate mousse and refrigerate for at least 4 hours or overnight to fully set.

                                        Garnish and Serve:

                                          - Before serving, garnish with chocolate shavings and fresh berries if desired. Slice and enjoy your decadent triple chocolate mousse cake!
