For the pastry puffs:

1 cup water

½ cup unsalted butter

1 teaspoon granulated sugar

1 cup all-purpose flour

4 large eggs

¼ teaspoon salt

For the strawberries:

1 pound fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 tablespoon lemon juice

For the cream filling:

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract

Zest of 1 lemon

For garnish:

Fresh mint leaves (optional)

Additional powdered sugar

Instructions
 

Prepare the strawberries: In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss well and let stand for about 20 minutes to macerate.

    Make the pastry puffs:

      - In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.

        - Once boiling, remove from heat and add flour all at once. Stir vigorously with a wooden spoon until a smooth dough forms and pulls away from the sides of the pan.

          - Let the dough cool for about 5 minutes. Gradually add eggs, one at a time, mixing well after each addition until the dough is glossy and smooth.

            Bake the pastry puffs:

              - Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

                - Using a piping bag or spoon, drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.

                  - Bake for 20-25 minutes, or until the puffs are golden brown and have risen. Do not open the oven door while baking.

                    - Once baked, remove from the oven and allow to cool completely on a wire rack.

                      Make the cream filling:

                        - In a large mixing bowl, beat together heavy whipping cream, powdered sugar, vanilla extract, and lemon zest until soft peaks form.

                          Assemble the pastry puffs:

                            - Once the pastry puffs are completely cool, carefully slice the top off each puff.

                              - Spoon a generous amount of the cream filling into the cavity of each puff, followed by a spoonful of the macerated strawberries. Replace the tops of the pastry puffs.

                                Garnish and serve:

                                  - Dust the assembled pastry puffs with powdered sugar and garnish with fresh mint leaves if desired. Serve immediately and enjoy your decadent treat!
