Ingredients

1 box (14 oz) graham crackers

2 (3.4 oz) boxes instant vanilla pudding mix

4 cups whole milk

1 container (8 oz) whipped topping (Cool Whip), thawed

1 cup semi-sweet chocolate chips

1 cup heavy cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Pudding: In a large mixing bowl, whisk together the instant vanilla pudding mix and whole milk for about 2-3 minutes until it thickens. Gently fold in the thawed whipped topping until well combined. Set aside.

Layer the Cake: In a 9x13 inch baking dish, arrange a single layer of graham crackers on the bottom. Spread half of the pudding mixture evenly over the crackers. Repeat with another layer of graham crackers and the remaining pudding. Top with a final layer of graham crackers.

Make the Chocolate Ganache: In a small saucepan over medium heat, combine the heavy cream, chocolate chips, powdered sugar, vanilla extract, and a pinch of salt. Stir continuously until the chocolate chips have melted and the mixture is smooth and shiny. Remove from heat and let it cool slightly.

Finish the Cake: Pour the warm chocolate ganache over the top layer of graham crackers. Use a spatula to spread it evenly across the surface.

Chill the Cake: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight if time allows. This helps the flavors meld and the graham crackers soften.

Serve: Once chilled, slice into squares and serve. Enjoy this decadent dessert that feels like an indulgent treat but is surprisingly easy to make!
