4 salmon fillets (about 6 oz each)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

3 tablespoons butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional)

Fresh basil for garnish (optional)

Lemon wedges for serving

Prepare the Salmon: Season the salmon fillets generously with salt and black pepper on both sides.

    Cook the Salmon: In a large skillet over medium-high heat, add the olive oil. Once hot, place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes until the skin is crispy, then gently flip the fillets and cook for an additional 3-4 minutes. Remove the salmon from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

        Add the Vegetables: Stir in the halved cherry tomatoes and Italian seasoning. Cook for about 2-3 minutes until the tomatoes start to soften. Then add the fresh spinach and cook until wilted.

          Create the Creamy Base: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until it melts and combines smoothly. For a little heat, add the crushed red pepper flakes, if desired.

            Return the Salmon: Once the sauce is creamy and well-combined, return the cooked salmon fillets to the skillet. Spoon the sauce over the top to coat the salmon.
