Ingredients
  

For the Cake:

1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Mascarpone Filling:

1 cup mascarpone cheese

1 cup heavy whipping cream

⅓ cup powdered sugar

1 teaspoon vanilla extract

For the Ganache Topping:

8 ounces dark chocolate, chopped

1 cup heavy cream

1 tablespoon butter

Instructions
 

Prepare the Cake Batter:

    - Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

      - In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.

        - Add eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until smooth.

          - Gradually stir in the boiling water (the batter will be thin) until combined.

            Bake the Cakes:

              - Pour the batter equally into the prepared cake pans.

                - Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

                  - Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

                    Make the Mascarpone Filling:

                      - In a medium bowl, whisk together mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form and the mixture is thickened.

                        Assemble the Cake:

                          - Once the cakes are completely cool, place one layer on a serving plate.

                            - Spread half of the mascarpone filling over the first layer, then place the second cake layer on top.

                              - Spread the remaining mascarpone filling over the top of the second layer and smooth it out.

                                Prepare the Ganache:

                                  - In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.

                                    - Remove from heat and pour over the chopped dark chocolate in a heatproof bowl. Let sit for 5 minutes.

                                      - Stir the mixture until smooth, then add butter and stir until fully incorporated.

                                        Top the Cake:

                                          - Pour the ganache over the top of the mascarpone cake, allowing it to drip down the sides.

                                            Chill and Serve:

                                              - Refrigerate the assembled cake for at least 1 hour to allow the ganache to set.

                                                - Slice, serve, and enjoy the layers of rich chocolate and creamy mascarpone!
