1 cup buttermilk

1 teaspoon hot sauce (optional)

1 cup all-purpose flour

1 cup cornmeal

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

½ teaspoon black pepper

Marinate the Chicken: In a large bowl, combine the buttermilk and hot sauce. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Prepare the Breading: In another bowl, mix together the flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

      Coat the Chicken: Remove the marinated chicken from the refrigerator. Shake off any excess buttermilk and dredge each piece of chicken in the flour-cornmeal mixture, pressing lightly to ensure a thick coating. Set aside on a plate.

        Heat the Oil: In a large, deep skillet or pot, pour in enough vegetable oil to reach about 1 inch deep. Heat the oil over medium-high heat until it reaches 350°F (175°C). To test if the oil is hot enough, drop a small piece of bread into the oil; it should sizzle and turn golden brown in about 30 seconds.

          Fry the Chicken: Carefully add the breaded chicken pieces to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).
