6 large croissants, torn into pieces

8 large eggs

1 cup whole milk

1 cup shredded cheese (cheddar or your choice)

1/2 cup cooked and crumbled breakfast sausage or bacon

1 cup mixed bell peppers, diced

1/2 cup red onion, diced

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat Oven: Begin by preheating your oven to 350°F (175°C) and greasing a 9x13 inch baking dish.

    Prepare Croissants: Tear the croissants into bite-sized pieces and spread them evenly across the bottom of the prepared baking dish.

      Cook Sausage or Bacon: If using sausage or bacon, cook until browned and crumbled. Drain excess grease and sprinkle it over the croissant pieces.

        Sauté Vegetables: In a skillet over medium heat, sauté the diced bell peppers and red onion until softened, about 4-5 minutes. Spread the sautéed mixture over the croissant and meat layers.

          Mix Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, dried oregano, salt, and pepper until well combined.

            Add Cheese: Stir in the shredded cheese into the egg mixture.

              Combine and Pour: Pour the egg and cheese mixture evenly over the croissant, meat, and vegetable layers in the baking dish. Use a spatula to gently press down the croissant pieces so they soak up the egg mixture.
