Ingredients
  

4 large buttery croissants

4 large eggs

1/4 cup milk or cream

1/2 cup shredded cheese (cheddar or Gruyère)

1 ripe avocado, sliced

4 slices of crispy cooked bacon or a vegetarian alternative

1/4 cup fresh spinach or arugula

1 tablespoon fresh chives, chopped

Salt and pepper to taste

Optional: Hot sauce for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Whisk the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.

      Sauté Vegetables: In a nonstick skillet over medium heat, sauté the spinach/arugula until wilted. Remove from heat and set aside.

        Prepare Croissants: Slice each croissant in half horizontally. Place them on a baking sheet lined with parchment paper.

          Add Egg Mixture: In the same skillet, pour in the egg mixture over medium-low heat, gently stirring until soft curds form. Remove from heat when the eggs are set but still creamy.

            Assemble the Croissants: On each bottom half of the croissant, layer some sautéed spinach, a slice of avocado, a piece of crispy bacon, and a generous spoonful of scrambled eggs.

              Top with Cheese: Sprinkle shredded cheese on top of the scrambled eggs, then place the top half of the croissant on each stack.

                Bake: Place the assembled croissants in the preheated oven for about 10-12 minutes or until the croissants are slightly toasted and the cheese is melted.

                  Garnish and Serve: Remove from the oven, sprinkle with chopped chives, and serve with hot sauce if desired.
