Ingredients

2 pounds sliced ribeye steak (or sirloin)

1 large onion, thinly sliced

1 large green bell pepper, thinly sliced

1 large red bell pepper, thinly sliced

4 cloves garlic, minced

1 cup beef broth

½ cup Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried oregano

1 teaspoon black pepper

½ teaspoon red pepper flakes (optional for heat)

6 hoagie rolls or sub buns

8 slices provolone cheese (or cheese of choice)

Fresh parsley, chopped (for garnish)

Instructions

In a large crockpot, combine the sliced ribeye, onion, green bell pepper, red bell pepper, and minced garlic.

In a separate bowl, whisk together beef broth, Worcestershire sauce, soy sauce, oregano, black pepper, and red pepper flakes. Pour the mixture over the meat and vegetables in the crockpot.

Cover the crockpot and cook on low for 7-8 hours, or on high for 4-5 hours, until the meat is tender.

About 30 minutes before serving, take off the lid and stir the mixture to combine. Allow to continue cooking without the lid to thicken the liquid slightly.

Preheat the oven to 350°F (175°C). Place the hoagie rolls on a baking sheet and cut them open, without slicing all the way through.

Fill each hoagie roll with the cheesesteak mixture, and top with 1-2 slices of provolone cheese.

Bake in the oven for 5-7 minutes or until the cheese is melted and bubbly.

Remove from the oven, garnish with chopped fresh parsley, and serve warm.
