1 ½ lbs ground beef

½ cup breadcrumbs (preferably Italian seasoned)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup French onion soup (store-bought or homemade)

1 large egg, beaten

1 tsp Worcestershire sauce

1 tbsp fresh thyme (or 1 tsp dried thyme)

Salt and pepper to taste

1 cup Swiss cheese, shredded

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Ingredients: In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, French onion soup, beaten egg, Worcestershire sauce, thyme, salt, and pepper. Mix until well combined but avoid over-mixing to retain tenderness.

    Shape the Meatloaf: Transfer the meat mixture to a parchment-lined loaf pan or shape it directly into a loaf in the crockpot. Ensure it’s evenly distributed for even cooking.

      Cook in the Crockpot: Place the loaf pan or the shaped meatloaf in the crockpot. Cover and cook on low for 6 hours or on high for about 3 hours, until the internal temperature reaches 160°F (71°C).

        Add the Cheese: About 15 minutes before serving, carefully remove the lid and sprinkle the shredded Swiss cheese evenly over the top of the meatloaf. Cover and continue to cook until the cheese is melted and bubbly.

          Garnish and Serve: Once the cheese is melted, carefully remove the meatloaf from the crockpot (use the parchment paper if you used a loaf pan). Let it rest for about 5 minutes, then slice and serve. Garnish with freshly chopped parsley for a pop of color.
