1 ½ lbs ground beef (80/20 blend for moisture)

1 cup breadcrumbs (preferably seasoned)

1 large onion, thinly sliced

2 cups beef broth

1 packet (1 oz) French onion soup mix

2 large eggs

1 cup shredded Swiss cheese

1 tablespoon Worcestershire sauce

2 cloves garlic, minced

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Onions: In a skillet, sauté the sliced onions in a little olive oil over medium heat until they become caramelized and golden brown, about 15-20 minutes. Stir occasionally to prevent burning. Remove from heat and set aside.

    Mix the Meatloaf Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, French onion soup mix, minced garlic, Worcestershire sauce, chopped thyme, and eggs. Season with salt and pepper. Mix until just combined, being careful not to overwork the meat.

      Assemble in the Crockpot: Form the meat mixture into a loaf shape and place it in the center of the crockpot. Spread the caramelized onions on top of the meatloaf. Pour the beef broth around the sides of the meatloaf (do not pour over the top).

        Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the meatloaf is thoroughly cooked (internal temperature should reach 160°F).

          Add Swiss Cheese: In the last 30 minutes of cooking, sprinkle the shredded Swiss cheese on top of the meatloaf. Cover and allow it to melt.

            Serve: Once finished, carefully lift the meatloaf out of the crockpot using a spatula. Let it rest for 10 minutes before slicing. Garnish with freshly chopped parsley before serving. Pair with garlic mashed potatoes or a fresh salad for a complete meal.
