Ingredients
  

2 lbs beef stew meat, cut into 1-inch cubes

1 cup beef broth

1 cup onion, chopped (about 1 medium onion)

1 cup mushrooms, sliced

2 cloves garlic, minced

2 tbsp soy sauce

1 tbsp Worcestershire sauce

2 tsp dried thyme

1 tsp paprika

¼ cup all-purpose flour

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large bowl, toss the beef cubes with the flour, salt, and pepper until well-coated.

    In the bottom of the slow cooker, layer the chopped onions and sliced mushrooms.

      Place the seasoned beef on top of the vegetables.

        In a separate bowl, mix together the beef broth, soy sauce, Worcestershire sauce, minced garlic, thyme, and paprika.

          Pour the broth mixture evenly over the beef in the slow cooker.

            Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender.

              Once cooked, taste and adjust seasoning as needed. If you prefer a thicker gravy, remove the lid in the last 30 minutes of cooking to let it reduce.

                Serve over mashed potatoes, rice, or egg noodles, and garnish with fresh parsley.
