3 lbs chicken pieces (legs, thighs, breasts)

2 cups buttermilk

2 cups all-purpose flour

1 tablespoon paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon cayenne pepper (adjust to taste)

1 teaspoon black pepper

2 teaspoons salt

1 teaspoon dried thyme

1 teaspoon dried oregano

Oil for frying (peanut or vegetable oil recommended)

Fresh thyme and lemon wedges (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken pieces with buttermilk, making sure they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight. This helps tenderize the chicken and infuse flavor.

    Prepare the Coating: In another bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, black pepper, salt, dried thyme, and dried oregano. This will be your seasoned flour for coating.

      Heat the Oil: In a large cast-iron skillet or deep fryer, heat about 2 inches of oil to 350°F (175°C). Use a thermometer to ensure accurate temperature.

        Coat the Chicken: Remove the marinated chicken from the refrigerator. Allow excess buttermilk to drip off, then dredge each piece thoroughly in the seasoned flour mixture, pressing it down to ensure a good coating.

          Fry the Chicken: Carefully place the coated chicken pieces in the hot oil, avoiding overcrowding the pan. Fry in batches if necessary. Cook for 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

            Drain and Rest: Once fried, transfer the chicken to a wire rack set over a baking sheet to drain excess oil. Sprinkle with a little extra salt while hot.

              Serve: Garnish the chicken with fresh thyme and serve with lemon wedges on the side for an extra zing. Pair with your favorite sides like coleslaw, cornbread, or mashed potatoes.
