1 pound large shrimp (peeled and deveined)

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1/2 teaspoon salt

1 cup cold sparkling water

1 egg (lightly beaten)

Vegetable oil (for frying)

Dipping sauce (soy sauce, ponzu, or tempura sauce)

Optional: sliced green onions and grated daikon for garnish

Prepare the Shrimp: Pat the shrimp dry using paper towels. This will help them become crispier during frying. Season lightly with salt and set aside.

    Make the Batter: In a large bowl, whisk together the flour, cornstarch, baking powder, and salt. Add the cold sparkling water and beaten egg, mixing until just combined. The batter should remain lumpy for a light and crispy texture—do not overmix!

      Heat the Oil: In a deep pot or fryer, heat about 2 inches of vegetable oil to 350°F (175°C). To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and float to the top.
