Ingredients

2 lbs beef chuck roast

1 tablespoon olive oil

1 onion, thinly sliced

4 cloves garlic, minced

1 cup beef broth

1 tablespoon soy sauce

2 tablespoons Worcestershire sauce

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon black pepper

2 teaspoons salt

1 tablespoon cornstarch

Vegetable oil (for frying)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Beef: In a slow cooker, place the beef chuck roast. Add the sliced onion and minced garlic. Pour in the beef broth, soy sauce, Worcestershire sauce, apple cider vinegar, smoked paprika, cumin, black pepper, and salt. Stir to combine.

Slow Cook: Cover and cook on low for 8-10 hours or until the beef is tender and shreds easily with a fork.

Shred the Beef: Once cooked, remove the beef from the slow cooker and let it cool slightly. Shred the beef using two forks, ensuring to separate any large pieces of fat.

Crispy Coating: In a bowl, mix the shredded beef with the cornstarch until well-coated. This will help to achieve a crispy texture when frying.

Fry the Beef: Heat 1 inch of vegetable oil in a large skillet over medium-high heat. Once hot, add the coated shredded beef in batches (avoid overcrowding). Fry until golden brown and crispy, about 3-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

Serve: Arrange the crispy shredded beef on a serving platter. Garnish with fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.
