4 bone-in or boneless pork chops (about 1 inch thick)

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 tablespoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 large eggs

2 tablespoons Dijon mustard

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a baking sheet or line it with parchment paper.

    Prepare the Coating: In a large bowl, mix together the grated Parmesan cheese, breadcrumbs, Italian seasoning, garlic powder, onion powder, salt, and pepper. Stir until well combined.

      Make the Egg Mixture: In a separate bowl, whisk together the eggs and Dijon mustard until smooth.

        Prepare the Pork Chops: Pat the pork chops dry with paper towels. This helps them crisp up better. Season each chop lightly with salt and pepper.

          Coat the Pork Chops:

            - Dip each pork chop first into the egg mixture, ensuring it’s well-coated, then let any excess drip off.

              - Immediately transfer the chop to the Parmesan- breadcrumb mixture, pressing it down firmly to ensure an even coating. Repeat for all pork chops.

                Arrange on the Baking Sheet: Lay the coated pork chops in a single layer on the prepared baking sheet. Drizzle or spray them lightly with olive oil to promote crisping.

                  Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the pork chops are cooked through (internal temperature of 145°F) and the coating is golden brown and crispy.

                    Rest and Serve: Once out of the oven, let the pork chops rest for 5 minutes. Garnish with chopped fresh parsley before serving.
