1 pound large shrimp, peeled and deveined

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup cold soda water (or club soda)

Oil for frying

Zest of 1 orange

1/2 cup fresh orange juice

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon ginger, grated

2 cloves garlic, minced

Chopped green onions and sesame seeds for garnish

Prepare the Shrimp: In a medium bowl, combine the flour, cornstarch, baking powder, salt, and pepper. Gradually add the soda water until the batter is smooth. The consistency should be thick enough to coat the shrimp.

    Heat the Oil: In a deep frying pan or pot, heat about 2 inches of oil over medium-high heat. You can test the oil's readiness by dropping a little batter in; it should sizzle and rise to the top.
