Ingredients

4 boneless, skinless chicken thighs

1 cup feta cheese, crumbled

1/2 cup panko breadcrumbs

1/4 cup all-purpose flour

2 large eggs

1/4 cup hot honey (or adjust to taste)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Chicken: In a large bowl, season the chicken thighs with smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss to coat evenly.

Set Up Breading Stations: In three shallow dishes, place the flour in one, beaten eggs in the second, and panko mixed with crumbled feta in the third.

Coat the Chicken: Dredge each chicken thigh in flour, shaking off the excess. Then dip into the beaten eggs, allowing any excess to drip off. Finally, press the chicken into the panko-feta mixture, ensuring an even coat.

Arrange the Chicken: Place the coated chicken thighs onto the prepared baking sheet. Drizzle with olive oil to help with crisping.

Bake: Bake in the preheated oven for about 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Drizzle with Hot Honey: Remove the chicken from the oven and drizzle with hot honey to enhance the flavors. You can add more or less honey depending on your spice preference.

Serve: Garnish with freshly chopped parsley and serve hot. Pair with a side salad or roasted vegetables for a complete meal.
