1 lb chicken thighs, boneless and skinless

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp smoked paprika

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp black pepper

1 tsp salt

1/2 tsp cayenne pepper (adjust to taste)

Oil for frying (vegetable or peanut oil)

1/3 cup honey

1-2 tbsp hot sauce (adjust to taste)

1 tbsp apple cider vinegar

Fresh chopped parsley for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the buttermilk, smoked paprika, garlic powder, onion powder, black pepper, and half of the salt. Add the chicken thighs, making sure they are well-coated. Cover and refrigerate for at least 1 hour (up to overnight for deeper flavor).

    Prepare the Coating: In a shallow dish, mix together the flour, cornstarch, remaining salt, and cayenne pepper.

      Heat the Oil: In a large skillet, heat about 1/2 inch of oil over medium-high heat. Make sure the oil is hot enough by testing it with a small piece of chicken; it should sizzle upon contact.

        Coat the Chicken: Remove each chicken thigh from the marinade, allowing any excess to drip off. Dredge them in the flour mixture, ensuring they are thoroughly coated. Shake off any excess.

          Fry the Chicken: Carefully place the coated chicken thighs in the hot oil. Fry for about 5-7 minutes per side, or until golden brown and crispy. Make sure to not overcrowd the pan. Transfer cooked chicken to a wire rack to drain excess oil.

            Make Hot Honey Sauce: In a small saucepan, combine honey, hot sauce, and apple cider vinegar. Heat over low until warmed and slightly thickened, stirring gently. Adjust the level of hot sauce based on your spice preference.

              Glaze the Chicken: Once all the chicken is fried, place it on a serving platter. Drizzle the hot honey sauce generously over the crispy chicken.

                Garnish and Serve: Sprinkle fresh chopped parsley over the top for a pop of color and added freshness. Serve hot with additional hot honey on the side if desired.
