1 lb salmon fillet, skin removed and cut into bite-sized cubes

1/4 cup honey

3 tablespoons soy sauce

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional for a kick)

1/2 cup cornstarch

1/4 cup vegetable oil (for frying)

Chopped green onions (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Salmon: In a bowl, mix honey, soy sauce, minced garlic, ginger, black pepper, and red pepper flakes. Add the salmon cubes and gently toss to coat. Let marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Prepare for Frying: After marinating, remove the salmon from the marinade (reserve the marinade for later). Toss the salmon cubes in cornstarch until each piece is well coated. Shake off any excess cornstarch.

      Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

        Fry the Salmon Bites: Carefully add the salmon cubes in a single layer to the hot oil. Fry for 2-3 minutes on each side or until golden brown and crispy. Work in batches if necessary to avoid overcrowding the skillet.

          Make the Sauce: While frying, pour the reserved marinade into a small saucepan. Bring to a boil, then reduce heat and let it simmer for about 5 minutes until it thickens slightly.

            Combine and Serve: Once the salmon bites are cooked, remove them from the skillet and place them on a paper towel-lined plate to drain excess oil. Drizzle the thickened honey garlic sauce over the crispy salmon bites.
