1 package of puff pastry (2 sheets, thawed)

8 oz ham (thinly sliced, preferably smoked or honey-glazed)

8 oz cheese (Gruyère, cheddar, or your favorite cheese, grated)

1 egg (beaten, for egg wash)

2 tbsp Dijon mustard

1 tsp dried thyme (or fresh thyme)

Salt and pepper (to taste)

Flour (for dusting)

Optional garnishes: fresh chives or parsley, chopped

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Puff Pastry: On a lightly floured surface, roll out each sheet of puff pastry to smooth out creases. Cut each sheet into 6 equal rectangles (3 squares for each of the two sheets).

      Assemble the Stacks: On half of the pastry rectangles, spread a thin layer of Dijon mustard. Then, layer slices of ham and sprinkle a generous amount of grated cheese on top.

        Seasoning: Sprinkle dried thyme, and season with salt and pepper. Place the remaining pastry rectangles on top of each stack to form a sandwich.

          Seal the Edges: Press down the edges of each stack with a fork to seal, ensuring the filling stays inside during baking.

            Egg Wash: Brush the tops of each pastry stack with the beaten egg to achieve a golden, crispy crust.

              Bake: Place the stacks on the prepared baking sheet and bake in the preheated oven for about 20-25 minutes or until they are puffed up and golden brown.

                Cool and Serve: Remove from the oven and let them cool for a few minutes before serving. Garnish with fresh chopped chives or parsley if desired.
