Ingredients

For the Fish:

4 boneless fish fillets (like tilapia or cod)

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

2 tablespoons fresh lemon juice

1 tablespoon fresh parsley, chopped (for garnish)

For the Golden Fries:

4 large russet potatoes, peeled and cut into fries

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and black pepper to taste

Fresh parsley for garnish

Instructions

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - In a large bowl, toss the cut potatoes with olive oil, garlic powder, paprika, salt, and pepper until well-coated.

        - Spread the fries in a single layer on a baking sheet lined with parchment paper.

          - Bake for 30-35 minutes, flipping halfway through, until golden brown and crispy. Garnish with fresh parsley before serving.

            Marinate the Fish:

              - In a bowl, combine buttermilk, lemon juice, salt, and pepper.

                - Submerge the fish fillets in the buttermilk mixture. Cover and refrigerate for at least 30 minutes to marinate (up to 2 hours for better flavor).

                  Coat the Fish:

                    - In another bowl, mix flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.

                      - Remove the fish from the marinade, allowing excess to drip off, then dredge each fillet in the seasoned flour, ensuring an even coating.

                        Grill the Fish:

                          - Preheat a grill or a grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.

                            - Cook the fillets for about 4-5 minutes on each side or until golden brown and cooked through (internal temperature should reach 145°F or 63°C).

                              - Remove from the grill and let them rest for a couple of minutes.

                                Serve:

                                  - Place the crispy grilled fish on a plate alongside the golden fries. Garnish with chopped parsley for an added touch.

                                    - Serve with lemon wedges and your favorite tartar sauce or aioli for dipping.
