1 lb boneless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup all-purpose flour

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon dried oregano

Vegetable oil (for frying)

Marinate the Chicken: In a large bowl, combine the chicken pieces with buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Cover and refrigerate for at least 1 hour (or overnight for best results).

    Prepare the Breading Station:

      - In one bowl, place the flour.

        - In another bowl, combine the breadcrumbs with the dried oregano.

          - Set up a three-step breading station: First bowl for flour, second for buttermilk mix, and third for breadcrumb mixture.

            Coat the Chicken: Remove chicken pieces from the fridge. Working one piece at a time, dredge the chicken in flour, then dip into the buttermilk mixture, and finally coat with breadcrumbs. Ensure that each piece is fully coated for maximum crunch.

              Heat the Oil: In a large saucepan, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

                Fry the Chicken: Carefully add a few pieces of the breaded chicken to the hot oil, making sure not to overcrowd the pan. Fry in batches for about 4-5 minutes or until golden brown and cooked through, turning occasionally.
