Ingredients

500g beef (thinly sliced)

1/4 cup cornflour (cornstarch)

1/4 cup plain flour

1 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

2 cups vegetable oil (for frying)

4 cloves garlic (minced)

1 inch ginger (grated)

2-3 red chillies (sliced)

1/4 cup soy sauce

2 tbsp oyster sauce

1 tbsp rice vinegar

2 tbsp brown sugar

2 green onions (sliced)

Sesame seeds (for garnish)

Instructions

Marinate the Beef: In a bowl, mix the beef slices with soy sauce, oyster sauce, rice vinegar, and brown sugar. Marinate for at least 30 minutes for better flavor.

Prepare the Breading: In another bowl, combine the cornflour, plain flour, baking powder, salt, and black pepper. Mix well.

Coat the Beef: Remove the beef from the marinade (reserving the marinade) and toss the slices in the flour mixture until well-coated. Shake off any excess flour.

Heat the Oil: In a large frying pan or wok, heat the vegetable oil over medium-high heat. You can test the oil temperature by dropping in a small piece of bread; it should sizzle and turn golden quickly.

Fry the Beef: Fry the coated beef in batches to avoid overcrowding the pan. Cook until crispy and golden brown (about 3-4 minutes), then remove and drain on paper towels.

Prepare the Sauce: In the same pan, add a little more oil if needed and stir-fry the minced garlic, grated ginger, and sliced red chillies for about 30 seconds until fragrant.

Combine Everything: Add the reserved marinade to the pan, bring it to a simmer, and let it thicken slightly. Toss the fried beef into the sauce until well-coated.

Serve: Transfer to a serving plate, garnish with sliced green onions and sesame seeds.
