4 medium-sized russet potatoes

½ cup unsalted butter, melted

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Prepare the potatoes: Wash and peel the potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes into thin rounds (about 1/8 inch thick).

      Make the garlic butter mixture: In a small bowl, combine the melted butter, minced garlic, dried thyme, paprika, salt, and black pepper. Mix well.

        Stack the potatoes: Arrange the potato slices in small stacks (4-5 slices per stack) and place them upright on the prepared baking sheet. Brush each stack liberally with the garlic butter mixture.

          Add cheese: Sprinkle shredded cheddar cheese and a bit of Parmesan on top of each stack.

            Bake: Place the baking sheet in the oven and bake for about 25-30 minutes, or until the potatoes are crispy and golden brown. For even crispier stacks, you can broil them for an additional 2-3 minutes at the end, but watch closely to avoid burning.
