For the Chicken:

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

1 cup all-purpose flour

1 cup panko breadcrumbs

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon Sriracha (adjust for spice level)

1 teaspoon honey

Juice of 1 lime

Salt, to taste

For Garnish:

sliced green onions

sesame seeds

Marinate the Chicken: In a bowl, mix the buttermilk, garlic powder, paprika, salt, and pepper. Add the chicken pieces to the marinade and let it sit for at least 30 minutes, preferably in the refrigerator.

    Prepare the Coating: On a separate plate, mix the all-purpose flour with a pinch of salt and pepper. In another bowl, set up the panko breadcrumbs.

      Coat the Chicken:

        - Remove the marinated chicken from the refrigerator. Take each piece and dredge it in the flour first, shaking off excess.

          - Then dip it back into the buttermilk and finally coat it in panko breadcrumbs, pressing gently to adhere.

            Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, lime juice, and salt until smooth. Adjust seasoning according to your taste preference.

              Fry the Chicken: In a deep skillet or frying pan, heat about 1 inch of oil over medium-high heat. Once hot, carefully add the coated chicken pieces in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, approximately 5-7 minutes per side. Remove with a slotted spatula and place on paper towels to drain excess oil.

                Serve: Arrange the crispy chicken on a serving platter, drizzling the Bang Bang sauce over the top or serving it on the side for dipping. Garnish with sliced green onions and sesame seeds.
