1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

1/4 cup all-purpose flour

Cooking spray or olive oil spray

For the Ranch Dip:

1/2 cup mayonnaise

1/2 cup sour cream

1 tablespoon dried dill weed

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon lemon juice

Salt and pepper to taste

Instructions
 

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Set up a dredging station:

      - In one shallow bowl, place the flour.

        - In another bowl, beat the eggs until smooth.

          - In a third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

            Coat the chicken pieces:

              - Dip each chicken piece into the flour, making sure to coat all sides, shaking off any excess.

                - Next, dip the floured chicken into the beaten eggs, allowing any excess egg to drip off.

                  - Finally, coat the chicken in the breadcrumb mixture, pressing gently to ensure it sticks. Place the chicken nuggets on the prepared baking sheet.

                    Spray the nuggets:

                      - Lightly spray the tops of the chicken nuggets with cooking spray or olive oil. This will help them become crispy while baking.

                        Bake the chicken nuggets:

                          - Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the nuggets are golden brown and cooked through. Flip them halfway through for even crispiness.

                            Prepare the Ranch dip:

                              - In a medium bowl, mix together the mayonnaise, sour cream, dried dill, garlic powder, onion powder, lemon juice, salt, and pepper. Adjust seasoning to taste.
