For the Donuts:

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 cup whole milk

2 large eggs

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

For the Crème Brûlée Filling:

1 cup heavy cream

1/2 cup granulated sugar

4 large egg yolks

1 teaspoon vanilla extract

Pinch of salt

For the Topping:

1/4 cup granulated sugar (for caramelizing)

A sprinkle of sea salt (optional)

Instructions
 

Prepare the Crème Brûlée Filling:

    - In a saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from heat.

      - In a bowl, whisk together the sugar and egg yolks until well combined and slightly thickened.

        - Gradually whisk in the hot cream, vanilla extract, and salt until smooth.

          - Pour the mixture back into the saucepan and cook over low heat, stirring constantly until it thickens (about 5-10 minutes). Do not let it boil.

            - Strain the mixture through a fine-mesh sieve into a bowl and let it cool slightly. Chill in the fridge while you prepare the donuts.

              Make the Donut Batter:

                - Preheat your oven to 375°F (190°C) and grease a donut pan.

                  - In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.

                    - In another bowl, mix the milk, eggs, melted butter, and vanilla extract until combined.

                      - Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).

                        Bake the Donuts:

                          - Fill each donut mold about halfway with the batter. Use a piping bag or a spoon for easier filling.

                            - Bake for 10-12 minutes or until a toothpick inserted comes out clean. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

                              Fill the Donuts:

                                - Once the donuts are cool, use a piping bag fitted with a small round tip to inject the chilled crème brûlée filling into the center of each donut. If you don’t have a piping bag, you can also use a squeeze bottle or cut a small hole in the donut’s bottom.

                                  Caramelize the Topping:

                                    - Place the filled donuts on a heat-proof surface. Sprinkle a thin layer of granulated sugar over the top of each donut.

                                      - Using a kitchen torch, carefully caramelize the sugar until it forms a crispy, golden-brown crust. If you don’t have a torch, you can place them under a broiler for 1-2 minutes, but watch closely to avoid burning.

                                        Serve:

                                          - Allow the caramelized sugar to cool for a minute, then sprinkle with a pinch of sea salt if desired. Enjoy your Crème Brûlée Donuts warm or at room temperature!
