1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup granulated sugar

¼ cup brown sugar

3 large eggs

1 teaspoon vanilla extract

1 tablespoon cornstarch

½ cup heavy cream

For the Crème Brûlée Topping:

½ cup granulated sugar (for caramelizing)

1 teaspoon vanilla extract

2 egg yolks

½ cup heavy cream

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (165°C).

      - In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar until well mixed.

        - Press the mixture into the bottom of a 9-inch springform pan, creating an even layer.

          - Bake for 10 minutes, then remove from the oven and let cool.

            Make the Cheesecake Filling:

              - In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

                - Add granulated sugar, brown sugar, and mix until combined.

                  - Add eggs one at a time, mixing well after each addition.

                    - Stir in the vanilla extract and cornstarch, then blend in the heavy cream until smooth.

                      Combine and Bake:

                        - Pour the cheesecake filling over the cooled crust in the springform pan.

                          - Place a baking tray filled with water on the lower rack of the oven (this creates steam and keeps the cheesecake moist).

                            - Bake for 55-60 minutes, or until the edges are set but the center remains slightly jiggly.

                              - Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

                                Prepare the Crème Brûlée Topping:

                                  - In a small saucepan over medium heat, combine heavy cream and vanilla extract. Heat until simmering, then remove from heat.

                                    - In a mixing bowl, whisk together egg yolks and granulated sugar until pale. Gradually whisk in the hot cream until combined.

                                      - Pour this mixture over the baked cheesecake, spreading it evenly.

                                        Caramelize the Topping:

                                          - Set the oven to broil and place the cheesecake under the broiler for 2-3 minutes, monitoring closely until the top is bubbly and caramelized. Alternatively, use a kitchen torch for more control.

                                            - Remove the cheesecake from the oven and allow it to cool completely before refrigerating for at least 4 hours, preferably overnight.

                                              Serve:

                                                - Once chilled, carefully remove the sides of the springform pan.
