8 ounces linguine pasta

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup sun-dried tomatoes, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup fresh spinach

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish

Cook the Pasta: In a large pot, cook the linguine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Sauté Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Create the Sauce: In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add the cherry tomatoes and sun-dried tomatoes, cooking for about 3-4 minutes until softened.

        Make it Creamy: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, Italian seasoning, and season with salt and pepper. Allow to cook for about 2 minutes until the sauce thickens slightly.

          Combine Ingredients: Add the fresh spinach to the skillet and stir until it wilts, about 1-2 minutes. Return the cooked shrimp to the skillet and stir to coat in the sauce.

            Mix with Pasta: Toss the cooked linguine into the skillet, adding reserved pasta water as needed to achieve your desired sauce consistency. Mix well to combine all the ingredients.
