12 oz. fresh cheese ravioli (store-bought or homemade)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

Cook the Ravioli: In a large pot of salted boiling water, cook the ravioli according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta cooking water.

    Sauté the Garlic and Tomatoes: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for another 3-4 minutes until they soften.

      Add Spinach and Cream: Stir in the baby spinach and cook until wilted. Pour in the heavy cream and bring to a gentle simmer. Stir occasionally.

        Incorporate Cheese and Seasoning: Reduce the heat to low and add the grated Parmesan cheese and Italian seasoning. Stir until the cheese has melted and the sauce is creamy. If the sauce is too thick, gradually mix in some reserved pasta water until you reach your desired consistency.

          Combine Ravioli with Sauce: Gently fold in the cooked ravioli, allowing them to soak up the creamy sauce. Season with salt and pepper to taste.
