1 lb (450g) large prawns (peeled and deveined)

2 tablespoons olive oil

2 tablespoons unsalted butter

4 cloves garlic (minced)

1 teaspoon red pepper flakes (adjust to taste)

1 cup spinach (fresh)

1 cup sun-dried tomatoes (chopped)

½ cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

1 teaspoon dried Italian herbs (or fresh herbs of choice)

Fresh basil (for garnish)

Instructions
 

Sauté the Prawns: In a large skillet, heat the olive oil and butter over medium heat. Once the butter has melted and is bubbling, add the prawns. Season with salt and pepper, and sauté for about 2-3 minutes on each side until the prawns turn pink and are cooked through. Remove them from the skillet and set aside.

    Create the Sauce: In the same skillet, add minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant. Add sun-dried tomatoes and spinach, stirring until the spinach has wilted.

      Add Cream and Cheese: Pour in the heavy cream and bring to a light simmer. Stir in the grated Parmesan cheese, mixing until the cheese melts and combines with the cream to create a rich sauce. Adjust the seasoning with additional salt, pepper, and Italian herbs.

        Combine Everything: Return the cooked prawns to the skillet, coating them well with the creamy sauce. Cook for another 2-3 minutes on low heat to warm through.

          Serve Hot: Garnish with fresh basil leaves and serve immediately over pasta, rice, or crusty bread for a complete meal.
