Ingredients
  

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup baby spinach

½ cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Lemon wedges for serving

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

    Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes until they turn pink and opaque. Remove shrimp from the pan and set aside.

      In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.

        Stir in the baby spinach and cook until just wilted, about 1 minute.

          Reduce the heat to low, and pour in the heavy cream. Stir to combine, then add the Parmesan cheese and Italian seasoning, stirring until melted and smooth.

            Return the cooked shrimp to the skillet, tossing them in the creamy sauce until well coated. Simmer for an additional 2-3 minutes to heat through.

              Taste and adjust seasoning as necessary. Serve hot, garnished with fresh basil leaves and lemon wedges on the side.
