2 boneless, skinless chicken breasts

8 oz fettuccine pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 cup heavy cream

1/2 cup Parmesan cheese, grated

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Cook the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until thoroughly cooked and no longer pink in the center. Transfer the chicken to a plate and let it rest before slicing it into strips.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Add the cherry tomatoes and cook for about 2-3 minutes until they start to soften. Stir in the fresh spinach and cook until wilted.

        Combine Ingredients: Lower the heat and add the heavy cream, stirring to combine. Gradually stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
