12 oz penne pasta

1 lb chicken breast, diced

1 cup sun dried tomatoes, chopped (in oil for extra flavor)

2 cups heavy cream

1 cup chicken broth

1 cup spinach, fresh

3 cloves garlic, minced

1 medium onion, finely chopped

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken breast, seasoning with salt, pepper, and Italian seasoning. Cook for about 6-7 minutes or until browned and cooked through. Remove the chicken and set aside.

      Create the Sauce: In the same skillet, add chopped onion and minced garlic. Sauté for about 2-3 minutes or until the onion becomes translucent.

        Add Sun Dried Tomatoes: Add the chopped sun dried tomatoes and stir for another 2 minutes, allowing the flavors to meld.

          Combine the Cream and Broth: Pour in the heavy cream and chicken broth, stirring until combined. Let the sauce simmer for about 5-7 minutes, allowing it to thicken slightly.

            Add Spinach and Cheese: Stir in the fresh spinach and grated Parmesan cheese. Cook until the spinach wilts and the cheese melts into the sauce.

              Combine Pasta and Chicken: Add the cooked penne pasta and sautéed chicken back to the skillet. Toss everything together, coating the pasta thoroughly with the creamy sauce.
