Alfredo sauce, a staple in Italian-American cuisine, boasts a rich history that dates back to the early 20th century. It is said to have originated in Rome, created by Alfredo di Lelio, who first served it in his restaurant, "Alfredo alla Scrofa." Originally, the sauce was a simple combination of butter and Parmigiano-Reggiano cheese, designed to coat fettuccine pasta and create a creamy consistency. This dish, known as "Fettuccine Alfredo," quickly gained popularity among tourists, particularly after Hollywood stars like Mary Pickford and Douglas Fairbanks dined there and brought the recipe back to the United States.

Ingredients

8 oz fettuccine pasta

1 lb steak (sirloin or ribeye), sliced thinly

2 tablespoons olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Gorgonzola cheese

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

Prepare the Steak: While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Season the sliced steak with salt and pepper. Add to the skillet and sear for about 2-3 minutes per side until cooked to your desired doneness. Remove the steak from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.

Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and bring it to a simmer. Stir in the Gorgonzola and Parmesan cheeses until melted and smooth. Add the Italian seasoning and mix well.

Combine: Toss the cooked fettuccine into the sauce, adding a splash of the reserved pasta water to help loosen the sauce if needed. Gently fold in the cooked steak, allowing everything to combine and heat through.

Serve: Plate the creamy steak Gorgonzola alfredo and garnish with fresh parsley for added taste and color. Enjoy your delicious comfort food delight!
