Spinach is the star of this dip, providing not only vibrant color but also a wealth of nutritional benefits. This leafy green is low in calories and packed with vitamins A, C, and K, as well as essential minerals like iron and calcium. Its high antioxidant content is another reason to love spinach, as it helps combat oxidative stress in the body. When preparing the dip, fresh spinach is preferred for its flavor and texture; however, you can also use frozen spinach in a pinch. Just make sure to drain it well to avoid excess moisture.

Ingredients

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Tortilla chips or sliced baguette (for serving)

Instructions

Preheat your oven to 350°F (175°C).

In a medium skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and set aside to cool slightly.

In a large mixing bowl, combine the softened cream cheese, sour cream, shredded mozzarella, grated Parmesan, onion powder, red pepper flakes (if using), salt, and pepper. Mix well until smooth and creamy.

Fold in the sautéed spinach and chopped artichoke hearts into the cream cheese mixture until fully combined.

Transfer the dip mixture into a baking dish and spread it evenly.

Bake in the preheated oven for about 25-30 minutes, or until the dip is bubbling and golden on top.

Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley.

Serve warm with tortilla chips or slices of baguette for dipping. Enjoy!
