Ingredients

12 oz cheese-filled tortellini

1 lb shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper to taste

Fresh basil leaves, for garnish

Instructions

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

Sauté Shrimp: In a large skillet over medium heat, add olive oil. Once the oil is hot, add the shrimp. Season with salt and black pepper. Cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove shrimp from the skillet and set aside.

Make the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and Italian seasoning. Allow it to cook for about 2-3 minutes, stirring frequently until the cheese melts and the sauce thickens slightly.

Combine: Add the halved cherry tomatoes and fresh spinach to the skillet. Cook for another 2-3 minutes until the spinach wilts. Gently fold the cooked tortellini and shrimp back into the sauce, tossing until everything is well coated.

Serve: Plate the creamy shrimp tortellini and garnish with fresh basil leaves for an added burst of flavor. Serve hot and enjoy your decadent Italian experience!
