Ingredients

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

3 tbsp unsalted butter

2 tbsp olive oil

4 cloves garlic, minced

1/2 cup dry white wine (like Sauvignon Blanc)

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp red pepper flakes (adjust to taste)

Zest of 1 lemon

2 tbsp fresh lemon juice

Salt and black pepper to taste

1/4 cup chopped fresh parsley, for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp, season with salt and black pepper, and cook until they turn pink, about 3-4 minutes. Remove the shrimp from the skillet and set aside.

Make the Sauce: In the same skillet, pour in the white wine and bring to a simmer. Let it cook for about 2-3 minutes, allowing it to reduce slightly. Stir in the heavy cream, red pepper flakes, lemon zest, and lemon juice. Cook on low heat for another 2-3 minutes, stirring frequently.

Combine Ingredients: Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water to achieve the desired consistency.

Bring it All Together: Add the cooked shrimp and fettuccine to the sauce, tossing until well coated. Adjust seasoning with more salt, pepper, or red pepper flakes as needed.

Serve: Plate the pasta, garnishing with chopped fresh parsley and an extra sprinkle of Parmesan cheese if desired. Enjoy your creamy shrimp scampi pasta!
