Ingredients
  

1 lb mixed seafood (shrimp, scallops, and fish fillets, diced)

4 slices of bacon, chopped

1 medium onion, finely diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced

1 cup celery, diced

1 cup carrots, diced

4 cups fish stock or clam broth

1 cup heavy cream

1 cup whole milk

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Bacon: In a large pot over medium heat, cook the chopped bacon until crispy. Remove and drain on paper towels, leaving the rendered fat in the pot.

    Sauté Vegetables: In the same pot, add the diced onion, celery, and carrots to the bacon fat. Sauté for about 5-7 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

      Add Potatoes & Broth: Add the diced potatoes, fish stock or clam broth, dried thyme, and smoked paprika. Stir well, bring to a boil, then reduce heat to simmer for about 15-20 minutes until the potatoes are tender.

        Incorporate Seafood: Stir in the mixed seafood and cook for an additional 5-7 minutes, until the seafood is cooked through and opaque.

          Make it Creamy: Lower the heat and stir in the heavy cream and whole milk. Allow to warm through without boiling. Season with salt and pepper to taste.

            Serve: Ladle the chowder into bowls, topping each with crispy bacon and fresh parsley. Serve with lemon wedges on the side for a zesty touch.
