12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy, based on preference)

1 cup cherry tomatoes, halved

4 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Brown the Sausage: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove excess fat if desired.

      Sauté Vegetables: To the skillet with the sausage, add the minced garlic and cook for about 1 minute until fragrant. Add the cherry tomatoes, spinach, Italian seasoning, and red pepper flakes (if using). Sauté until the tomatoes are softened and the spinach is wilted, about 3-4 minutes.

        Make it Creamy: Reduce the heat to low and pour in the heavy cream. Stir well to combine. Gradually add the Parmesan cheese while stirring until it melts and creates a creamy sauce. If the sauce is too thick, use reserved pasta water to reach desired consistency. Season with salt and pepper to taste.

          Combine with Pasta: Add the drained rigatoni to the skillet, tossing it in the creamy sausage mixture until well coated. Let it cook for another minute to meld the flavors.
