1 lb ground sausage (Italian or breakfast sausage)

1 can (10 oz) Rotel diced tomatoes with green chilies, undrained

1 (8 oz) package cream cheese, cubed

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp cayenne pepper (optional for extra heat)

1 bag tortilla chips (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Sausage: In a large skillet over medium heat, crumble and cook the ground sausage until browned and fully cooked, about 5-7 minutes. Drain excess grease if necessary.

    Add the Rotel: Pour the undrained Rotel into the skillet with the sausage. Stir to combine and bring to a simmer.

      Incorporate Cream Cheese: Add the cubed cream cheese to the skillet. Stir continuously until the cream cheese is melted and fully incorporated with the sausage and Rotel mixture.

        Mix in Cheeses: Gradually stir in the shredded cheddar and Monterey Jack cheeses. Continue to mix until the cheeses are melted and everything is combined into a creamy sauce.

          Season: Add in the garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Stir well to incorporate the seasonings into the mixture.

            Serve: Remove from heat and transfer the creamy sausage dip to a serving bowl. Garnish with chopped cilantro. Serve warm with tortilla chips for dipping.
