Ingredients
  

2 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried basil

1 teaspoon dried oregano

8 ounces fettuccine or pasta of your choice

Fresh basil leaves for garnish

Optional: Red pepper flakes for a spicy kick

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Prepare the Chicken: Season the chicken breasts generously with salt and pepper. In a large skillet over medium heat, add the olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink inside. Remove from the skillet and let rest for a few minutes before slicing.

      Sauté the Aromatics: In the same skillet, add minced garlic and cook for about 30 seconds until fragrant. Stir in the cherry tomatoes and cook for about 2-3 minutes until they start to soften.

        Add the Spinach: Add the fresh spinach to the skillet and stir, cooking until wilted, about 1-2 minutes.

          Make the Sauce: Lower the heat and add the ricotta cheese, grated Parmesan, dried basil, and oregano. Mix well, adding reserved pasta water as needed to reach a creamy consistency.

            Combine Everything: Toss the cooked pasta into the skillet with the sauce, ensuring every strand is coated. Add in the sliced chicken and gently mix until combined.

              Serve: Serve immediately, garnishing with fresh basil leaves and a sprinkle of red pepper flakes if desired.
