Ingredients
  

6 medium-sized russet potatoes, peeled and diced

6 strips of thick-cut bacon, chopped

1 large onion, diced

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 cup sharp cheddar cheese, grated

2 tablespoons apple cider vinegar

2 teaspoons Dijon mustard

1 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, chopped for garnish

Fresh chives, chopped for garnish

Instructions
 

In a large pot over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the grease in the pot.

    Add the diced onion to the pot and sauté in the bacon grease for about 5 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

      Stir in the diced potatoes, chicken broth, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 15-20 minutes, or until the potatoes are tender.

        Once the potatoes are tender, use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend only half and leave the rest as is.

          Return the soup to low heat, then stir in the heavy cream, cheddar cheese, apple cider vinegar, and Dijon mustard. Mix until everything is well combined and the cheese is melted.

            Taste and adjust seasoning as needed, adding more salt, pepper, or vinegar for a tangy kick.

              Serve hot, garnished with crispy bacon, chopped green onions, and fresh chives.
