1 cup wild rice, rinsed

1 pound boneless, skinless chicken breasts, diced

8 ounces fresh mushrooms (such as cremini or button), sliced

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

6 cups chicken broth

1 cup heavy cream

2 tablespoons olive oil

2 teaspoons dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Wild Rice: In a medium saucepan, bring 4 cups of water to a boil. Add the rinsed wild rice, reduce to a simmer, cover, and cook for about 45-50 minutes until tender. Drain any excess water and set aside.

    Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened.

      Add Mushrooms and Chicken: Stir in the sliced mushrooms and diced chicken. Cook for another 5-7 minutes, stirring frequently, until the chicken is no longer pink and the mushrooms are slightly browned.

        Add Garlic and Herbs: Add the minced garlic, dried thyme, and rosemary to the pot. Cook for about 1 minute until fragrant.

          Pour in Broth: Slowly pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Bring to a gentle boil.

            Simmer: Once boiling, reduce the heat and let the soup simmer for about 15-20 minutes, allowing the flavors to meld together.

              Add Rice and Cream: Stir in the cooked wild rice and heavy cream. Season with salt and pepper to taste. Allow the soup to heat through for another 5 minutes.
