1 lb (450g) boneless, skinless chicken breasts, diced

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (cremini or button)

2 medium carrots, diced

2 celery stalks, diced

1 cup wild rice, rinsed

6 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced chicken and sauté for about 5-7 minutes until golden and cooked through. Remove the chicken from the pot and set aside.

    In the same pot, add the chopped onion, garlic, mushrooms, carrots, and celery. Sauté for about 5-6 minutes until the vegetables are softened and the mushrooms have released their moisture.

      Stir in the wild rice, chicken broth, thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 45-50 minutes, or until the rice is tender.

        Once the rice is cooked, return the cooked chicken to the pot. Stir in the heavy cream and let the soup simmer for an additional 5-10 minutes. Adjust seasoning if necessary.

          Garnish with fresh parsley before serving. Serve hot.
