Ingredients

12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup baby spinach

1/2 cup grated Parmesan cheese

1 tsp red pepper flakes (adjust to taste)

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Drain and set aside.

Sauté the Shrimp: In a large skillet over medium-high heat, heat olive oil. Add the shrimp, seasoning with salt and pepper, and sauté for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Make the Creamy Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream, red pepper flakes, and Italian seasoning. Let it simmer for about 5 minutes to thicken.

Add Tomatoes and Spinach: Stir in the cherry tomatoes and baby spinach. Cook for an additional 2-3 minutes until the spinach wilts and tomatoes soften.

Combine: Return the cooked shrimp to the skillet, add the drained fettuccine, and toss to combine. Sprinkle in the Parmesan cheese and stir until melted and creamy. Adjust seasoning with salt and pepper as desired.

Serve: Plate the pasta and garnish with fresh basil leaves. Optionally, sprinkle additional Parmesan cheese and red pepper flakes on top for an extra kick. Enjoy your romantic meal!
