8 oz (225 g) penne pasta

1 lb (450 g) Italian sausage (mild or spicy, casings removed)

1 medium onion, diced

2 cloves garlic, minced

1 cup (240 ml) heavy cream

1 cup (100 g) grated Parmesan cheese

1 cup (240 ml) chicken broth

1 cup (150 g) cherry tomatoes, halved

2 cups (60 g) fresh spinach

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Cook the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, crumble the Italian sausage into the skillet. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.

      Add Onions and Garlic: Add the diced onion to the skillet and cook for another 3-4 minutes until the onion becomes translucent. Stir in the minced garlic and cook for 1 minute until fragrant.

        Create the Sauce: Slowly pour in the chicken broth and bring to a simmer. Reduce the heat to low, and stir in the heavy cream and Italian seasoning. Allow it to simmer for about 3 minutes until slightly thickened.

          Incorporate Cheese and Vegetables: Stir in the grated Parmesan cheese until melted and creamy. Add the cherry tomatoes and fresh spinach, cooking until the spinach is wilted. Season with salt and pepper to taste.

            Combine Pasta and Sauce: Add the drained penne pasta to the skillet, tossing everything together until the pasta is well coated with the creamy sauce.

              Serve: Remove from heat and garnish with fresh basil leaves before serving.
