8 oz fettuccine pasta

2 tablespoons olive oil

1 lb boneless, skinless chicken breasts, sliced into strips

Salt and black pepper, to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

2 cups fresh spinach

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta cooking water.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken strips with salt and black pepper. Add the chicken to the skillet and cook for about 5-7 minutes, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add more olive oil if necessary, and sauté the minced garlic for about 30 seconds until fragrant. Be careful not to burn it.

        Add Liquid Ingredients: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream, Italian seasoning, and Parmesan cheese. Mix well until the cheese has melted into the sauce. If the sauce is too thick, add some of the reserved pasta water until you reach the desired consistency.

          Combine Ingredients: Add the cooked chicken back to the skillet along with the fresh spinach. Stir until the spinach wilts and everything is well combined.

            Toss the Pasta: Add the cooked fettuccine to the skillet and toss everything together to coat the pasta in the creamy garlic sauce. Adjust seasoning with salt and pepper as needed.

              Serve: Plate the pasta and garnish with freshly chopped parsley and additional Parmesan cheese if desired.
