1 pound beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

8 ounces cremini mushrooms, sliced

1 teaspoon paprika

1 tablespoon Worcestershire sauce

1 cup beef broth

1 cup sour cream

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

8 ounces egg noodles or your choice of pasta

Prepare the Pasta: Begin by cooking the egg noodles according to package instructions. Drain and set them aside.

    Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef sirloin and season with salt and pepper. Cook until browned on all sides, about 3-5 minutes. Remove the beef from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the diced onion and sauté for about 3 minutes until translucent. Add the minced garlic and sliced mushrooms. Cook for an additional 4-5 minutes, until the mushrooms are softened and browned.

        Combine Ingredients: Sprinkle the paprika over the vegetables and stir to combine. Return the cooked beef to the skillet.

          Create the Sauce: Add Worcestershire sauce and beef broth to the skillet. Bring to a simmer and let it reduce slightly, about 5 minutes.

            Finish with Cream: Lower the heat and stir in the sour cream and Dijon mustard, mixing until everything is well combined and creamy. Allow the stroganoff to heat through but avoid boiling to prevent curdling.
